If they said the last saturday night train was on Sunday then people would have to look at the Sunday timetable and thus the last Saturday train would actually be the first (or maybe 2nd, unless they're every 10 mins or so then it would be the 3rd) Sunday one. But then that would mean there'd be a gap of about 5 and a half hours between the 1st (or maybe 2nd/ 3rd) train in the day and the 2nd (3rd/4th) which would come at about 6am. Pissed people would have to look at a different timetable and work out what day it is today based on the day it was yesterday (unless of course it still is today in which case they'd have to look at todays timetable and then check their watch and if its nearing midnight have a look at tomorrows timetable)....... Delays would be a nightmare as you'd have to be constantly updating the timetables for tomorrow in case the 2358 train was two minutes late and what happens if the 1 minute past midnight train is two minutes early then it would mean a change to todays timetable and by the time that change was made it would be yesterday so you'd be changing the past and we all know that cant be done (not without a flux capacitor). Unless of course you're reading this tomorrow in which case substitute "today" for "tomorrow" and "tomorrow" for "the day after". Now I wish I'd come back with my usual stock answer of "thick fucks!"
