Break the clay and throw it out, it's a one use cooking vessel. After you've seasoned the fowl, you wrap it in baking paper then enclose it in the clay - 5 quid gets you enough potter's clay to do a few guinea fowls. It's called Faraona alla creta. I will admit the Christmas Day ritual has evolved to the extent that it now involves croissants, however the rest of the day is as it always been. Champagne and or orange juice with present opening. Its been about ten years since it had the strange change over to me being the host rather than guest.
