What's for lunch that's interesting or a bit different and isn't just a ham sandwich or some beetroot

Recipe?

Simple enough I recall, ripe Avocado, chilli pepper, onions, coriander, tomato and lime.

Amounts depend on how much you're making but don't put too much onion and tomatoes in, (get rid of the middle of the tomatoes or use it for something else), finely chop the pepper and onions as well. Make sure you squeeze half a lime in the mix or a full lime if you're making a big amount, make sure the avocado is soft and just mix to taste depending on how much heat you want in.

Spunds good. I make a slight variation - spring onions and a handful of fresh chopped coriander. And a gulg of good olive oil to loosen it up a bit.

I never had fresh coriander at the time, spring onion sounds ok but not sure I'd bother with olive oil. The lime is the key to guacamole and a few other Mexican dishes.
