You're entirely correct. Have never tried, nor ever intend to try tripe.

Lentils are lush, they go brilliantly with salty hams or confit of duck. Nice alternative to potatoes, rice etc.

I make a dead simple salad with them- add cucumber, red onion, fresh coriander , fresh chilli, all diced up to about lentil size, bit of olive oil, squeeze of lime.

I'm quite fond of a lentil dhal with a curry.

 

Never understood the appeal of confit - I've had confit duck and confit potatoes before and unless i've yet to try a decent effort it's always made me feel sickly afterwards.
