I’ve sussed out that instead of trying to make it healthy I just have it instead of the occasional takeaway. So full fat coconut milk. And in addition to the paste (used Blue Dragon as it doesn’t contain fish sauce) I hoy in some dark soft sugar, plenty soy sauce, fresh lime juice, ginger, garlic, a squirt of sweet chilli sauce and sriracha plus fresh coriander and basil.
