Chicken and aubergine curry (cooked in red thai curry paste and veg stock until all the liquid has just evaporated) Brøndby Aloo (potatoes, tomato and bacon) Curry-roasted Okra (marinate in oil, cumin, chilli flakes, turmeric and cinnamon then roast 30 minutes on 200) Awesome. Okra is immense, one of my favourite veggies. I had some in my homemade curry this evening. That roasted version sounds particularly nice too.
