Made a batch of gluten free brownies today.

 

1 can cooked black beans (drained)

60g dark chocolate (melted)

4 tsp bourneville powder

3 eggs

3 tbsp olive oil (light)

100g demerara sugar

1 tsp sumac

1 tsp vanilla essence

pinch sea salt

 

Blend it all together and bake 25-30 minutes. Not bad at all, but personally prefer gluten-tastic brownies.

Key Lime Pie:

 

1 can condensed milk

8 limes (zest one of them and keep it handy)

300ml double cream

300g or so Bourbon Biscuits

100g Butter

1 tsp brown sugar

1 square of chocolate (for decorating)

 

- Melt the butter and stir into crushed bourbon biscuits. Pack that into a tart tin for your base and chill in the fridge.

 

- Juice all the limes, make sure you keep the zest of one.

 

- Pour condensed milk, double cream, lime juice, sugar and lime zest in and mix it all together until it starts to thicken. Best if you have an electric mixer. Really whisk the shit out of it though otherwise it won't set.

 

- Pour the filling into the tin and leave it in the fridge overnight.

 

- Sprinkle over some leftover lime zest and grate the chocolate on top.

 

Will give you 8 generous slices. I last did it at a family gathering and everyone loved it. :) (adapted the recipe from the BBC site - they don't whisk it nearly enough and they put way too much cream in)

 

Making this for someone's dinner party atm but going to add 50ml greek yogurt and 250ml cream just to experiment. Ginger biscuit base too!

Make sure you whisk the shit out of it ;)

 

Add a bit of golden syrup when you're melting the butter for your base too. I did it the last time and it was lush.

Whisked like buggery! :D That's a cracking idea for the base...

 

Had loads of leftover ginger snap crumbs so for dinner I made a lamb mince curry and used the crumbs to thicken up the sauce. Worked a treat!

Roasted cauliflower florets with Ras El Hanout tonight, no oil, about 40 minutes at 200. Healthy and delicious (had it with a burger with blue stilton on to balance things out)

I had precisely this thought process late last night:

 

1. I'm peckish. Could use a snack before bed.

2. There's leftover veg (carrots/cauliflower/broccoli) in the fridge. Healthy. Good.

3. Wait, there's blue cheese too. Gratin time! :boogie:

Mexico - Smoky Chilli and Cheese

Goa - Veg Curry

Philly - Steak and potato

Blue - Stilton and mushroom

Greg's - Potato, XXX Cheddar and Marmite.

 

Quite possibly the hottest day of the year outside too.

I use Quinoa for salads. Cucumber, tomatoes, spring onion, mild green chilli (etc), oil and vinegar with cooled down quinoa. Usually have it with grilled chicken or summat.

 

Similar antics.
