Who's made their own pizza base?

 

I've tried 3 times now and end up binning it for various reasons. The last time I binned it because it kept breaking up when trying to kneed it.

 

Anyone recommend a youtube or recipie to follow?

Jamie Oliver's pizza dough recipe is fool proof. Just make sure you use a pizza stone for the best results

I was using strong flour.  First time I tried I dont think I let it prove long enough.  I tried getting it in a pizza base shape and it kept shrinking and I couldnt stretch it enough.  So next time I tried another recipie and that was a different one and they're my issues.

I'll try Olivers this weekend.

Definitely try and get a pizza stone. Makes a massive difference to the quality as you only have to cook it for about 6 minutes in a hot oven.

Beech wood shaving slung into bottom of the oven smoke and add another level.

It's at home but I will. Feel free to remind me though as I'm likely to forget. It's actually a slimming world one. Also it's just for the sauce so you can basically add anything you want. The only thing I added that wasn't in the recipe was a pinch of sugar and I used the same amount of Cayenne where it specified chilli powder as I like it quite hot. It's a curry after all. You make a paste at the beginning from a bit of water, onion, garlic and ground ginger in the food processor. You could add some oil at this point but it really doesn't need it I found.

Trying to branch out a bit as I tend to get stuck in a loop of making the same shit over and over.

Another good thing about it is you can upscale it easily and it's freezable so it's a bit of a faff but then you've 3 or 4 meals out of an hour or so's cooking and prep. Going to try some of their other recipes too. I did the Rogan Josh and it was nice too but I'm going to cut back on the cinnamon next time as it was a bit too much and overpowered the dish a bit. I've been trying to cook stuff from scratch more lately as with having the kids and their being quite young it's easy to get into the habit of eating stuff out of jars etc.

Also recently made my own dry chilli mix based on a few I'd seen on the internet which I tweaked a bit, as there's loads of crap in the packets you buy in the supermarket. Also doubles up nicely as a paste for fajitas and stuff like that if you add a bit of water.

Aye I tend to make 4 portions of whatever and freeze the rest.

The recipe's are for four portions anyway but I thought it was a bit tight and doubled the quantities but reckon that equates to about 6 portions rather than the 8 they claim. But anyway, the flavours are fucking spot on. The obvious missing ingredient to a restaurant / take away curry is the ghee but, while you obviously could make it with that, it's a bit too rich for every day stuff I reckon and you dont need it. It's obviously a canny bit healthier without it as well.

In that vein, made this tonight, fairly straightforward (preemptively cut out the vegetable stock though, it'd have been swimming in liquid :naughty: otherwise, a splash of water to loosen up the spices was enough). Brown basmati rice, lime pickle, onion parathas from the freezer aisle at Asda, Bob's your uncle or aunt depending on how they choose to identify.
