Our lass always wanted to try Risotto and a few years ago she ordered it at this beautiful open air restaurant on top of a hotel in Nice. She hated it so we swapped and I loved it. Which basically means she'll twist but hey ho. Let's not kid ourselves that you will be sticking with 640 calories. Garlic bread is almost guaranteed to be making an appearance. So I amended Nigellas recipe to what was in the cupboard and knocked up a very tasty lunch for under 300 cals. Phone battery quit before final pic but it was presentable. My brother has shifted 3 1/2 stone since Christmas by doing it, so I thought I'd give it a crack. It's not that much of an effort for me tbh, just cutting out the crap on fast days.
