Brock Manson 0 Posted May 21, 2013 Share Posted May 21, 2013 Made a batch of gluten free brownies today. 1 can cooked black beans (drained) 60g dark chocolate (melted) 4 tsp bourneville powder 3 eggs 3 tbsp olive oil (light) 100g demerara sugar 1 tsp sumac 1 tsp vanilla essence pinch sea salt Blend it all together and bake 25-30 minutes. Brock Manson 0 Posted May 23, 2013 Share Posted May 23, 2013 Key Lime Pie: 1 can condensed milk 8 limes (zest one of them and keep it handy) 300ml double cream 300g or so Bourbon Biscuits 100g Butter 1 tsp brown sugar 1 square of chocolate (for decorating) - Melt the butter and stir into crushed bourbon biscuits. Pack that into a tart tin for your base and chill in the fridge. - Juice all the limes, make sure you keep the zest of one. - Pour condensed milk, double cream, lime juice, sugar and lime zest in and mix it all together until it starts to thicken. Best if you have an electric mixer. Really whisk the shit out of it though otherwise it won't set. - Pour the filling into the tin and leave it in the fridge overnight. - Sprinkle over some leftover lime zest and grate the chocolate on top. Will give you 8 generous slices. I last did it at a family gathering and everyone loved it. (adapted the recipe from the BBC site - they don't whisk it nearly enough and they put way too much cream in) Making this for someone's dinner party atm but going to add 50ml greek yogurt and 250ml cream just to experiment. Had loads of leftover ginger snap crumbs so for dinner I made a lamb mince curry and used the crumbs to thicken up the sauce. Worked a treat!
