Hopefully some good will come out of this for the UK, although I don't know what can actually be done (regarding domestic anti-western values). I guess the first step is to want to do something about it. I hope Australia watches and learns, because we are heading down the same path.

Just to add to the differences between the two ragus from the two regions, of course I missed a very important point. With the Neapolitan ragu you cook the meat in whole pieces as opposed to ground up minced meat of your Bolognese ragu. Yesterday I used pork and beef ribs as well as osso buco, bones and all, and I chopped up a 200g block of pancetta into pea shaped cubes. I browned the meat and set it aside before deglazing the pot with a shiraz and cooked 2 chopped onions and the pancetta for nearly an hour until the onions quite literally melted away continually adding splashes of wine so as not to dry the pot out. Before I put the meat back into the pot I added 2 tbsp of tomato paste and another splash of wine and cooked that for a bit. Then 1 bottle of passata and a tin of chopped roma tomatoes went in. 6 hours of gentle simmering with the lid on (making sure I mixed it every 15-20 minutes so it didn't stick to the bottom) the meat was ready to take out with it quite literally falling right off the bone. The sauce continued to simmer for another two hours (lid half on) and transformed into a thick, morish sauce. Yesterday I had the meat topped with sauce and crusty bread with a side salad for tea. Tonight (finished it 5 minutes ago as a matter of fact) I cooked some rigatoni and melded the sauce into the pasta. It was topped with grated romano cheese. Absolutely delightful and well worth the effort. I will be making this once every few weeks now.

To do with the quantity of tomato puree and paste you use. Neapolitan has a much greater concentration of tomato in it.

The cream of the crop from Rugby League move into Rugby Union in the UK don't they? That's where all the money is. Rugby League is on the brink of bankruptcy over there is it not? Shame if it is, that sport has it all over Union. As a spectacle I enjoy watching rugby league and follow it here in Australia avidly. Not the brightest chaps when speaking but they certainly are amongst the toughest. Punctured lungs, dislocations, playing with fractured legs and broken jaws (back in the day), cracked vertabrae, ACL's, the injuries are endless. It is a genuinely tough sport.

Ditched the vegetarian diet after a month. Am still off the drink though. Made a Neapolitan Ragu today (took 8 hours to make it). It was a first attempt, but have to say it is the best pasta sauce I have ever made by far. Inspired by an Anthony Bourdain episode of No Reservations about Naples. It was alchemy at work in my kitchen today. Today's dinner was the pork and beef ribs and the veal shank which infused my sauce with its flavour. Tomorrow I shall have the sauce, after the day's full rest, over some rigotoni pasta.

After Olive Oil gets over 200 degrees celcius, it becomes a saturated fat, and so it becomes unhealthy and high in cholesterol. Remember that. Canola Oil is better when cooking on high heat.

In a can't-be-fucked mode of operation, but still doing a River Cottage inspired dinner; 1 onion roughly chopped 3 cloves garlic crushed A slash (2 tblsp) of curry powder Half that amount of both cummin and coriander powder Touch of cinnamon Tin of chick peas drained and washed 2 tblsp tomato paste. Slash of water to create a bit of sauce That's it, my dinner. Hugh did this on a beach with bare essentials btw. Not one of his classics but it suits me today.

Been having a Japanese veg stew I've concocted the last 3 nights, inspired after watching an episode of Bizarre Foods. Basically a staple dish for sumo wrestlers - it is super nutritious, protein rich and extremely filling - though it's not the reason they get fat. They expand their girth by eating copious amounts of rice with the stew (that also has chicken, pork or fish) and drinking a shitload of beer before having a snooze quickly afterwards. It is shit easy to prepare (veges cut up and stored in the fridge) which is good after a long day at work; - Stock made from combu (hard seaweed), and dried shiitake mushrooms soaked in water brought to a simmer. - Then you simply chuck in wombok (chinese cabbage), chinese broccoli, choi sum, some other weedy looking shit I don't know the name of but was told it was good for stock pots, mushrooms - shiitake, shimeji, enoki, oyster - and cubes of tofu. - After it is cooked (which is basically a 10 minute job), put into a smaller serving bowl getting a bit of everything and top it with grated daikon (white radish) and pour over a drizzle of sauce (made from bonito sauce, rice vinegar, and lemon juice). Needed the first night to get used to eating so many vegetables and the fact I probably didn't cook it long enough, and so the farts were fairly rancid and I was a little uncomfortably bloated, and so it wasn't much fun sitting on the toilet, but the two nights after where a made sure the veges were cooked properly I haven't had a reaction and I feel good afterwards. Have not had any craving for meat yet anyway which I'm best pleased about...

Drawing a long bow here if people think going veg, worrying about cholesterol levels or the size of your belly, or using moisturiser is effeminate. It is called looking after yourself. Does anyone here manscape btw? I must confess to doing a bit of this, but that is because my GF likes it neat and tidy down there and I think it is only fair as I prefer her to be brazilled and trimmed. Nothing worse than having pubes caught in your mouth.

Made a vegetarian chilli. First attempt at it too and it was nice; 1/3 cup olive oil 1 large onion chopped 1 small red chilli, seeded (or not if you like it hot like me), chopped 1/2 red capsicum chopped A dash (1/4 tsp) of chilli flakes (sorry CT) 1/2 tsp ground cinnamon 1 tsp ground cumin 1 tsp dried thyme 3 garlic cloves crushed A tin of 4 mixed bean drained and rinsed well A tin of lentils drained and rinsed A tin of chopped tomatoes 1 tbs tomato paste 1 cup chopped flat-leaf parsley Place oil in a large saucepan over medium heat. Add the onion, fresh chilli and capsicum and cook until softened. Add the chilli flakes, cinnamon, cumin and thyme and cook for a further minute.Reduce heat to low and add the garlic, beans, lentils, tomatoes and tomato paste. Cover and simmer for 15-20 minutes stirring it occasionally. Remove lid and cook for a further 5 minutes or until thickened. Stir through the parsley and serve with rice or tortillas. Sprinkle the chilli with grated cheese. All washed down with mineral water. My GF enjoyed it as well and this was the one thing that concerned me most about my sudden dietry change, whether she could keep up or not, though it is only the second day, but...

I'm no Jamie Oliver, but basmati rice, pasta, a bag of veg and tomato paste in an Asian broth is just utterly wrong man! Next time alter the ingredients a bit and try this; 800mls of chicken stock (self-made or shop bought it doesn't matter) 1 star anese dropped in while bringing stock to boil 1 clove of garlic sliced or crushed 1-2 tsp of grated fresh ginger 1 tsp of brown sugar Little squirt of soy sauce (1 dessert spoon) 1 chilli chopped 2-3 dried shiitake mushrooms rehydrated, stalk removed then chopped 2 packets of udon noodles 1 bunch of ripped up/coursely chopped bok choy, choi sum or chinese broccoli. A handful or two of bean sprouts at the end Surely you can get things like udon noodles, asian greens and shiitake mushrooms around where you live in this day and age. It is a Nigella Express recipe too btw. Quick, light, easy and extremely lush.

Cheers for the link Finished the last two bottles of red I had in the house tonight to go with the soup (good excuse for it) and side salad, I am usually out in a pub right now filling my tank up, being a Friday. Tonight I'm drunk but thinking healthy - how funny is that?!? I bought 24 bottles of Santa Vittoria today to replace the beer and wine. Not only am I giving the alcohol up but also the coke and other gassy drink. Hope I don't suffer from any serious withdrawal .

I know you are. I've noticed through some of your posts I've read that you've have some kind of epithany which happened after Christmas. Fair play, you've lasted nearly two months man! Many feeble minded people can't go a week. The secret is what satisfies one's appetite. I'm new to this. My plan of attack is going hard on beans and mushrooms and being very liberal on spices. Starchy stuff like potatoes and rice too, I live close to Asian groceries stores and will eat Kim Chee that I like (Korean vegetable condiment) which goes well with rice. Quinoa and tofu are high up on the list of things to eat down the track as well. I am pretty serious about this - this is more than a shitty fad. I will try and update my progress as often as possible as well as my diet so you may garner ideas and vice versa.

Getting into Kosher food there Gemmill? I've started a complete lifestyle change beginning today. No more going out and getting paraguayed. No caffeine. No more meat (chicken, fish, pork, lamb or beef). No more dairy. Cutting salt out almost entirely. Tonight I've had a hearty veg soup - Mexican style. 2 tblsp olive oil 1 onion chopped 2 stalks celery chopped 1/4 butternut squash chopped 3 washed desire potatoes chopped 1 tin kidney beans 1 tin chopped tomatoes 3 cloves garlic 3 teaspoons mexican spice 4 teaspoons smoked paprika 2 cups veg stock (homemade - salt free) Not sure how long this will last, but I know my liver needs a break, and my cholesterol level needs lowering. I will aim for 1 month of this kind of clean diet and go from there. The soup was surprisingly nice and I felt satisfied afterwards. Wholemeal bread rolls (no butter) to wipe up the bowl.
